I swear I could eat feta cheese by the truck load. It’s that amazing. I top it on homemade pizzas, salads, anything I can. So on New Year’s Eve when my friend asked that I bring either a starch or a vegetable I thought… let’s do both! This Greek Pasta Salad is perfect to bring to a party or enjoy for a family dinner (you can prepare this to eat warm as well), and best of all it’s a healthy option as we start a New Year. Plus, it’s so simple to make and a crowd pleaser. Victory!
Ingredients
Six servings of whole wheat penne pasta
One container of feta cheese
1/2 red onion (alternative: yellow)
Flat-leaf parsley (a few sprigs)
One cucumber (I always get the seedless)
Tomatoes (whole grape tomatoes or chop regular tomatoes)
Kalamata olives (alternative: black olives)
Dressing: juice from one lemon, 1/4 cup olive oil, 1/4 cup red wine vinegar, dash of salt and pepper.
Directions
Cook pasta according to the directions on the box. Let cool.
Dice tomatoes, cucumber and olives. Add to pasta. Top with chopped parsley.
Combine ingredients for dressing and add to dish.
Crumble feta cheese and generously sprinkle on top.
