Recipe: Greek Pasta Salad

January 6, 2012

I swear I could eat feta cheese by the truck load. It’s that amazing. I top it on homemade pizzas, salads, anything I can. So on New Year’s Eve when my friend asked that I bring either a starch or a vegetable I thought… let’s do both! This Greek Pasta Salad is perfect to bring to a party or enjoy for a family dinner (you can prepare this to eat warm as well), and best of all it’s a healthy option as we start a New Year.  Plus, it’s so simple to make and a crowd pleaser. Victory!

 Ingredients

Six servings of whole wheat penne pasta

One container of feta cheese

1/2 red onion (alternative: yellow)

Flat-leaf parsley (a few sprigs)

One cucumber (I always get the seedless)

Tomatoes (whole grape tomatoes or chop regular tomatoes)

Kalamata olives (alternative: black olives)

Dressing: juice from one lemon, 1/4 cup olive oil, 1/4 cup red wine vinegar, dash of salt and pepper.

Directions

Cook pasta according to the directions on the box. Let cool.

Dice tomatoes, cucumber and olives. Add to pasta. Top with chopped parsley.

Combine ingredients for dressing and add to dish.

Crumble feta cheese and generously sprinkle on top.

I love this kind of pasta salad. I make a similar version that’s warm and incorporates other veggies, and it’s one of Joe’s faves. I used to make it for him in college, and he named it “Pasta Dream,” because he would dream about eating it.

Wow!! That looks amazing! I absolutely love dishes like this. I like to make big batches and then have extras for lunch. I find I have the hardest time planning meals when I have to work a lot of 10-7s or any kind of mid because I still have to get up semi early to get ready and make food, and I never wanna plan lunch and dinner. It’s perfect to have these types of dishes that are delicious for any meal of the day!!

I just ran across your site through IFB’s links! Congrats on making the list! I love your blog! Will definitely be back often.

Lauren: hope this works for you. Love dishes that are perfect hot or cold and that I can have on hand for a few days. Consider topping this over lettuce just to mix it up. Enjoy!
